A Simply Delicious Tomato & Avocado Salad

I know, I know. It's been a minute. I've noticed something. In the blogging world (social media in general), if you've gone missing for an extended period of time, you're either dead - or something else is severely wrong. But best believe, I am very much alive. I've just been......recharging. Recharging is important.
Sometimes, inspiration escapes me, and because of that, I need to tell myself that it's okay to take a small break if I'm not feeling inspired.
A couple of important things has happened during this 12-day hiatus, and I'm thankful for it all. We'll save all that for another time though. Let's get to the real reason for this post - this quick and easy tomato and avocado salad. I want to thank my friend Carletta for the inspiration to make this delicious salad. She makes the most basic meals look like gourmet dishes, and I always find myself texting her shortly after she posts pictures or videos on her snapchat of all these meals she cooks for her and her husband, bugging her for the recipe and ingredients so that I can attempt to make my dish look half as good as hers.
This recipe doesn't call for a lot of ingredients, which made me want to prepare it even more. Check out Gimme Delicious's recipe! I didn't add onions to mine, and I added lemon juice instead of lime, simply because that's all I had in the house. It will taste great either way. I paired the salad with shrimp scampi, and it was extremely satisfying, especially since I had no plans on spending too much time in the kitchen this evening.
