A Quick Note on The Bell Pepper
Can you believe that there was once a time when I did not like bell peppers? I used to think they were pretty disgusting, and you couldn't pay me to eat them. But then I grew up and realized that bell peppers are not only fun to cook with (color, color, color), but they are good for you, and they actually taste good. They are very low in calories, and are packed with vitamins A, C, E, as well as vitamin B6. In a nutshell, we should all be celebrating the bell pepper, okay?
I cooked a really quick, simple meal this evening (sautéed shrimp with red and green bell peppers), and it was so yummy and satisfying that I will probably make it multiple times over the next few days. Sidenote: snacking on an uncooked bell pepper is surprisingly good as well!
